CREAMY TOMATO PASTA — VEGAN & DAIRY FREE Easiest & creamiest pasta made with simple ingredients!!!! INGREDIENTS: — Pasta of choice — 1 cup crushed tomatoes or marinara sauce — 2 tbsp olive oil — 2-3 garlic cloves, minced — 2 tsp Italian seasoning, or to taste — 1/4 cup shredded parmesan or nutritional yeast — 1/2 large avocado (KEY) — Red pepper flakes, to taste — Salt & pepper, to taste 1. Boil your water, add some salt & cook your pasta. Save 1/4 cup pasta water for later. 2. Heat a large pan over medium heat. Once the pan is hot, add olive oil, garlic & chili flakes. Stir & reduce heat to low. 3. If you don’t have marinara sauce, cut tomatoes in small pieces and crushed them. Once you have a tomato paste add them to the pan. 4. Add Italian seasoning, salt & pepper. Allow sauce to simmer on low heat for about 10 minutes & stir occasionally 5. Add the tomato sauce, avocado & parmesan cheese to a blender. Blend everything until you have a smooth & creamy sauce. 6. If you want to thin the sauce, slowly add 1/4 cup of pasta water to the sauce & mix (I didn’t add any to mine) 7. Mix in the pasta with the sauce, garnish with oregano, red chili flakes or parmesan & enjoyyyyyy 🤤🤤🤤
