Easy brunch idea — ‘Eggs Benedict’ well my version of them — Homemade hash brown patties topped with avocado, red onion & poached egg. INGREDIENTS — 1 1/2 cup of peeled & grated potato — 1/4 cup spelt flour (or any other flour) — 1 egg — 1 tsp olive oil — 1/2 tsp salt, adjust to taste — 1/4 tsp black pepper, adjust to taste DIRECTIONS: 1. Peel & grate your potatoes. Rinse and squeeze all the excess moisture. 2. In a mixing bowl, add the grated potatoes, egg, flour, salt & pepper. 3. Heat a pan to medium heat and add the tsp of olive oil. 4. Spoon in 1/4 of the potato mixture & cook as if it were a little potato pancake. Repeat 5. Cook for about 5 minutes each side or until golden brown. 6. Serve by adding avocado, red onion and eggs on top. 7. Enjoy :)))))))
